Chimay Blue - A Monk's Brew with a Tale

This delicious beverage is called Chimay Blue. Chimay was created in 1862 in the Belgian municipality of Chimay and is brewed by Trappist monks. Trappists must produce what they consume, so essentially, they get drunk a lot. Chimay is sold only for the financial support of the monastery, and sales of Chimay exceed $50 million per year. So, these are some rich, baller-ass monks. The story of Chimay reminds me of a story from my childhood priest, Father Christopher. Father Christopher was a badass who used to sell weed after mass. Sadly, in 1994, Father Christopher was murdered by members of a rival church in a turf war for control of the Delco suburbs. This tragic event is known locally as the crusades.

Instructions:

Pour beer into a glass; if you have a Chimay branded glass, even better. You can also consume directly from the bottle.

My Review of Chimay:

Smooth, with flavor notes that have hints of honey and citrus! After consuming just one, I began living a minimalist life, humming with peaceful tranquility. Memories of a 35-year-old going on 75-year-old meth addict asking me to help her load minutes onto her TracFone so she can frantically call her son begin to fade. I don’t think she was really trying to call her son, but I no longer care!
